think of old lvl 56 is now lvl 62 ish
you will prob want to make it seasonal and just do main quests to end of mediah
so when all next seasons u can just skip to end of mediah

that could take maybe around 4-8 hours stone chamber start

Yeah you better do most of questline and side quests (campsite, pets, marni fuel etc. just to name a few) so you never have to do any of them ever again on alts. L56 realistically for a unexperienced still takes a couple of hours. But even for a new player, lv60 in a day shud not be an issue. I usually quest my alts to lv 51 (by choosing the everwinter mountain questline, takes about 1,5h to complete) and just grind mobs from 51-60
I'll boost you if you'd like! Level 56 will be quick if you use any exp scrolls or the like if you've obtained any 
I do however strongly agree with @jolly tiger , because to complete the season pass you'll need to do a few specific tasks/quests that will be beneficial to you down the road. 
Main quests especially should be done, and following along with the side quests that you'll need for season pass until you're completely done with everything in the pass (Which looks like a little arrow pointing up at the top right next to your minimap).
If you'd like to quest to 61, as also suggested by Cash, then I'd strongly recommend that you check these videos out.
