CS job prospects are so all over the place right now, I don't know if you're "guaranteed" to make the money back by attending UT Dalls. vs if you're open to doing more school you could do an MS.
Dorming is a cool fun experience that is a once in a lifetime kinda sorta thing. Is it possible to apply to transfer to the main campus and still keep your scholarship? Are you able to study abroad or something else?
