Have you logged into your own instance since resetting your password? It's possible that Overseerr isn't actually able to connect to Plex, because your credentials are now out of date. Try using the "Log Out" option, and log back in again with your new Plex credentials.
Like you can still open Overseerr with your existing cookie just fine, but it won't be able to connect to your Plex server until you log out and back in again.
