We have peripherals and everything, she will do light gaming as she mostly does stardew but wants to hop into co-op games with the crew, helldivers, borderlands series, hogwarts legacy. Playing at 1080 60hz probably for the foreseeable future.
Anything I could or should change?

get a cheaper gpu and get a better monitor, 7800xt at 1080p60 makes no sense

7600X combo NC sent, with the savings you could also just get a reasonable monitor for a 7800XT. Monitors are cheap as hell
For SSD the Klevv C910 will save you like $10
B580 is a good option as well if you don’t need 7800XT power
Just make to enable resizable bar in BIOS if you go B580
