You can use https://filmot.com/ and type in a keyword or phrase in Japanese with quotation marks around it and then search manual subs to find videos about topics that interest you.
For example, here's a search for videos with the keyword マイクラ (Minecraft):
https://filmot.com/search/"マイクラ"/1?channelID=&gridView=1&searchManualSubs=1
I have a spreadsheet with a bunch of random channels with soft subs by typing in phrases or words into filmot, but obviously it's far from complete

For filmot searches:
I like to try filtering by channel results on a filmot search to see if I can find a channel with lots of subbed videos
So I'll try clicking on this first channel here and then only 2 subbed videos show up
So then I click on "show details" and delete the original keyword I searched with (in this case マイクラ) and replace it with just the hiragana letter の
And now I see this channel has 10 subbed videos
If the stuff that you like doesn't have subs, I would still suggest to keep watching it, because being engaged in what you're watching is very important.
But you can also try seeing if there are any similar channels with soft subs to throw into the mix
If you know what kind of channels you're looking for I can try and see if I can find anything, but I can't promise I'll find something. Soft subs are a bit rare on Japanese YouTube
Sometimes a channel will only have subs on their most popular/older videos, so you can sort by most popular and see if that helps at all. I personally never worried abt watching with subtitles and just did a lot of separate reading. You can always read and look up unknown words from the comments and/or description box before watching a video, that can help boost comprehension.
Reading the description box and comments before the video is a great idea! I sometimes read them after the video, but they contain a lot of keywords used in the video, so reading them before hand makes a lot of sense

Something I do a lot is just type the word I'm hearing into jisho, mine it from jisho with yomitan, and then go back to the video with autogenerated subs and clip the audio/image with ASBplayer
This is assuming the autogenerated subs are incorrect although a lot of times they're fine
