In order for you to make sure OBS does not lag while it's recording, you should make the Stats Dock shown, just like this:
It is prefered to have a second monitor so you are able to see how it's doing without having to alt tab (by having OBS on your second monitor)
It is normal to get a few dozens of skipped frames when alt tabbing

idk if someone already said this, and im not sure if this is your exact issue, but if your videos look good on your device and hideous on yt upload videos in 1440p (set output resolution in obs recording tab to 2560x1440 or export from your editing software as 1440p)
it makes yt use their fancy compression algorithm that they use for larger channels
