Use Industry 4.0 to save more uneducated people to where they are actually needed, like the DLC industries
There is no problem with overeducated cims. If there are enough cims they will also take positions for uneducated workers, no problems. But of course, if they have the choice they prefer those for educated.
So just make sure you have enough workers (with high enough education), so the unemployement rate should be above 5%
If you have a lot of overeducated workers, a simple mod on PC can help - Employ overeducated workers. I have been using it, too

other than that you don't need to have schools everywhere and with capacity for everyone, levelling up every district to 5, that way you'd get more architecturally diverse city and you'll also get "lower class" for your farm/lumber industry etc

They get abandoned if they have less than half of their worker max and it can be remedied by having more people

educated or not more workers would be useful, they won't be educated at start
Make more residential.

i was also making a point that you don't need to cover 100% need for school if you have workplaces that want uneducated
Well, but school help with buildings getting higher levels meaning more income
at some point you arrive at a moment where income doesn't matter
may be, but to worry about enough uneducated cims is also not needed
