I’m sure someone has had this idea before, but I was thinking about why villagers use emeralds so much while it’s incredibly rare to find. I think the answer might be that most emeralds were mined at some point, causing there to be vast amounts of them in circulation underground. But why? Who mined it? Was it the villagers? Perhaps the villagers used to be miners and builders in the past, but due to the illagers have become stagnant.

But it is correct. There is a villager wind faction in Dungeons that mine most if not all emeralds

Whether or not ancient builders or the precursors to the villagers mined them at any point, I think it's safe to say that the villagers based their currency on emeralds because of how of their perceived rarity.

(until the player shows up and ruins their economy of course)

It's also possible that the wandering traders might be involved as the majority of their trades are for emeralds.

Simple they mining them because it's shiny and beautiful. And because emeralds are rare they became very valuable and stable money system.
