Okay this might seam weird, but hear me out. Every morning a large percentage of all undead die because of the sunlight, yet the next night there are just as many Zombies and Skeletons as the night before, which makes zero sense. Another point is that they just appear/spawn without any place where they could have come from. And they can also be summoned by spawners

I think their spawning is purely a gameplay mechanic.
I personally believe that they're the dead ancient builders, and their quantity is so vast that the world has a huge amount of them
I mean they are “undead”. Under certain conditions they could be reanimated from damaged remains. Zombies and skeletons burn in daylight, and ashes are probably not the best material to revive from even in the Minecraft universe. But, Husks don’t burn in daylight, and Drowned mostly stay in the water. Husks can even turn into regular zombies when sitting in water for a long time, and zombies into drowned. Maybe there’s a reverse process unknown to the player?
Well, the youtuber whose discord server this is believes moonlight/starlight is magical. Perhaps this energy resurrects their charred corpses.
