It can be everywhere you want. Just change safe_z_home
to be more precise, it can be anywhere within the limits of you x,y min and max

I think I set my z offset wrong

That will add a section at the bottom of your file, that can be edited directly on the dashboard.
Like I said, follow that guide. Then it should automatically comment that offset out and add a new thing at the very bottom, iirc

After you finished that guide, you should print a first layer test, and then use that buttons to set a new offset. Then print another first layer test, until you got a good first layer

So your bed_mesh should be something like that:
mesh_min: 40, 15
mesh_max: 215, 215
You got out of range because to mesh the point 15, it would have need to go to -23.55
And that is ofc, outside of your print area

Like I said. If you want to mesh point 100,100, your extruder tries to go to 61.45,90
