When you say you cant pick your audio input, do you mean you cant pick your audio input ingame, or do you mean for the computer itself?

Cards and Tankards chooses the default input audio that your computer has chosen, check your computer settings to see if you have the wrong input chosen for the computer itself.

Yeah, there’s no option to change my audio input in game

I don’t think I should have to change my default audio input every time I want to play

Currently we do not have a way to change your input/output audio in game, If you want your feedback of the game to have the best chance of being seen by the developers, it is best to put it in #feedback-general

You can. Change the default input and output in widows settings and possibly in the steam settings

Steam, and by proxy cards and tankards on steam uses your "Default communications device" as your mic or headset
