Here for me there are 67/69 enemies, but the two missing are the ones that appear in the exclusive PlayStation mission (from what I saw in the total list of enemies) and that do not impact the challenge. The missing appearances are "additional content" (at the moment 87/91) and from what I've seen, it also doesn't impact the progress of the achievement.
Finally, I still didn't get the achievement. Has anyone gone through this?

It'll be a painful task but you will have to compare the enemies that you've already unlocked to this list (hogwarts legacy all enemies locations on powerpyx.com) and find the one that haven't unlocked yet.

From what I've seen, a bug fix patch came out on the 14th that involved winning the collection challenges, but they postponed the launch on PS5 for the weekend. If that's my case, it's ok to wait. The problem is to know if this is the scenario or not

Yes, #📢announcements talks about it. I'm not sure which problem of collection they are addressing tho. There are multiple problems like chest missing
