I haven't played them, but I love games that you die a lot. I was playing Hogwarts Legacy in difficult mode without using Ancient Magic or Avada Kedavra and it took me 10 tries to win the final boss.

Then by all means give them a shot! I'd say try out Dark Souls 3 or Bloodborne to get a feel for the genre if you're not familiar with it, mainly cause they probably go on sale nowadays.

Arkane makes great games with action/RPG elements. Prey, Dishonored, etc.

I'm suggesting Dark Souls 3 from a frugality standpoint for someone who supposedly hasn't played the genre before. Better to get a feel for it at a lower price before making a more expensive investment. Elden Ring is still full price, though I doubt Dark Souls 3 is still being sold at it.
Doesn't hurt that DS3 is a fantastic game in its own right.
Best case you love it and buy Elden Ring, then enjoy both games.
Worst case you don't like DS3 and you save some money.
