I’ve finally been able to analyse the trailer for myself and what people assumed to be a patronus was shown off in what looks like to be care of magical creatures so it might have been just a projection of a unicorn to display (I am not cutting out the possibility of patronus, this is just something I observed) as the scene right after seems to be the same location and same professor

Theres a multitude of reasons they might not have, the biggest one I can think of is A: unnecessary motion capture/animation time for a movement not many people will use, b. they couldn't figure out how to make it look natural without clipping too much, which would cause more discourse with players, and C. stop sitting in the castle and EXPLORE DAMN YOU
