youd have to change a certain bit, change the name, and then id probably change the bit back to be safe
those things are for modders, you will probably break your save if youre using it to cheat

Im pretty sure you can change it in Mod Menu. Unless their game isnt modded. If you mean Jokers name.

i did it on my save, though theres no official release for p5r mod menu so you just kinda have to ask someone for theirs and hope it works

You could literally break the progress of the game if you do so. But if you just do things like give yourself stuff like Personas and items, should be fine.
