It does appear to be related to your mods, I see "Fungi Delight" and Xaero's minimap being mentioned in the crash log

Sometimes mods/interactions between some mods can cause crashes even after you've started playing for a while

Hey, your crash is actually caused by a mod, specifically Fungi Delight 1.3. There's a bug in MorelMushroomBlock.randomTick() that throws a NullPointerException whenever a morel mushroom block gets a random tick in a loaded chunk. That's why it crashes without warning a bit after startup.

This bug is already reported here: https://github.com/MehdiNoui/FungiDelight/issues/8, no fix yet.

Workaround until a fix is released:

  • Remove Fungi Delight, or
  • Delete all morel mushroom blocks from your world
