I look for a mod it can change the keybinds of the game menu and a mod that when we open the inventory we don't uncrouch

for your first mod, I'm a little confused what you're looking for. The control settings in the game can change pretty much any keybind you ask for. As for your second request, there are a few options:
If you are playing before version 1.21.9, the Toggle Sneak setting in the game settings will allow you to stay crouched in your inventory. After 1.21.9, you will need the Revert Toggle Sneak mod: https://modrinth.com/mod/revert-toggle-sneak
