What are you asking about exactly?
You can play vanilla or modded Minecraft 1.21.1 on Modrinth, if that's what you're asking, but many mods still need to be updated for that version

You can make a new instance by pressing the + button in the bottom left and selecting Game version 1.21.1

You can also modify an already existing instance by clicking on it, going to the Options tab, clicking on Edit version and selecting the Game version 1.21.1
(I don't recommend doing this because there's lots of mods that still haven't been updated for the latest minecraft version)

Thanks for your help man I really appreciate it! I tried going in to Fabric API “menu” or whatever you call it and couldn’t find anywhere to update it so I had to press “Update all” in my instance

Fabric API, Fabric Loader and Game version are three completely different things, but hey I'm glad you got what you wanted!🫡
