Most Imperials have a medieval peasant type understanding of the galaxy at large. Most or all the news they get is a game of telephone and/or pure propaganda. Atomans, for example, know about Cadia because Cadia is a big propaganda piece. But they wouldnt be able to point it out on a map or tell you anymore more than "Its the planet that defended us". Anything they know thats non-Imperial is from "You need to hate this" preachers and announcements like the Two Minutes Hate from 1984.
As to how much they know about the government, It Depends. If I'm a slag shoveller I know who my boss is, maybe who his boss is, and vaguely the Noble family I should listen to even if I cant name a single member, and then The Emperor himself at the top of course.
But as with anything, It Depends
But as a general rule, Imperial citizens are ignorant of most things

As others mentioned, you need to be mostly un-mutated, have some degree of sanity left to realize Chaos is actually fucking you over, be deemed useful by the neighbourhood Inquisitor (most other Imperials will just outright kill you)...so in 40k, really, really, rare, but not impossible as a normal human
And even then, on death Chaos entities might still be able to claim your soul
