Afaik Rubric Marines were standard marines that became living armors after Magnus did some Warp psychic shenanigans, with Tzeentch if i am not wrong. And since Rubric Marines are those living armors, if it gets destroyed, do mages simply warp it back? Or once it's gone, stays gone?

A slight correction in that Ahriman was the one who made the Rubric Marines. On accident, he was trying to permanently fix the flesh change, which he technically did do.
As for the warping it back, yeah. A sorcerer can reseal the soul into a suit of armor.
