chip or no chip I actually don't see much of a difference if the line in the Episode II was "We modified their genetic structure to make them less independent than the original host. They are totally obedient, taking any order without question."
Chip just makes it so it is removable whereas genetic manipulation would be not

There's been two instances of necrons and tau fighting together against tyranids, one time the necrons just left after the fighting was done and the other the necrons wiped out the tau too.
The T'au sept world of Uan'voss is almost overrun by a sudden onslaught of Tyranids, only to be rescued by the most unlikely saviors. Basically the issue stems from the fact that ogryns barely have had any proper lore/media coverage in 40k before Darktide, it very much doesnt make sense for an ENTIRE sub-species of humans spread across the GALAXY to have the same mental traits.
Ogryns at large go between either being mentally stunded or kept dumb as to be compliant to manipulation by Imperials, thats more or less the entire point of their existence as an abhuman in the Imperium.
The ones ingame also display about as many moronic tendencies as much as smart ones, theres a lot more to explore with an archetype like this beyond "haha they cant count" or "haha they are so stupid they are scared of tight places". People just assume all ogryns are braindead morons and expect it to say that way lol
Also another thing, if it wasnt lore accurate it wouldnt be in the game. GW meticulously still oversees any addition that gets put into the Darktide, Fatshark doesnt have as much free reign as people think they do lol
