For traitor legions they generally shattered into war bands

regarding Chapter organization. A chapter has 1000 marines excluding support staff, officers, honor guard, scouts, neophytes ect.
which makes them much smaller then Legions
but Space Marines in chapters learn how to do every battle role

Also, as a side note if your interested in Ultramarines specifically, they were one of the largest legions after the Horus Heresy ended. So they have many many successor chapters. There were multiple "foundings" of space marines throughout the 10k years leading up to present day.
