Like, there's one scene where a krieger finally takes off his mask in front of a group of normal soldiers, and this is after multiple battles of them seeing this dude do the most batshit insane charges. And they finally get a good look at his face, and it's a kid. Maybe barely a teen. And these soldiers learn that almost all Kriegers are that young because they simply won't live long lives due to their lifestyles now. Their society is basically a lord of the flies situation now.

Well, there's a misconception there. Tau don't "unite". You either conform and join a chaste, or they war with you. They might spend time on diplomacy to get you to see the benefits if joining, but ultimately if you choose not to, they view it as you have chosen to go against the Greater Good, their entire creed.

Tau are canonically descended from plains-dwelling prey animals (their teeth are described as wide and tombstone shaped, like grazing teeth). Their ancestor was the equivalent of earth’s antelope, cow, or other ungulate.

They are descendents of herbivores. Being omnivorous is a recent development for them. So yes, they are more closely related to whatever their planet's "cow" would be than they would be to any other analogous animal from Earth.

So they are omnivorous cow people. And even when they were still living in a primitive state, they almost certainly still got the vast bulk of their nutrition from plant based sources.

These are based on findings of the Imperial survey team that originally cataloged the planet of T'au. They determined the native sapient species was a descendent from local plain dwelling herbivores, obviously turned omnivore at some point.

Tau are not an aquatic species, nor does their religion or culture revolve around aquatics. The names we know their vehicles by are, to my knowledge, the names the Imperium has translated when they made contact with the Tau's Water Caste, which is their diplomatic caste. Also, many of the names are based on how the vehicles move or behave, as in an airship manta uses its wings to glide and coast.
