How come it seems like Space Marines die so easily? Some of these cinematics I see show them getting put down with weapons that could kill a normal person

With all that armour and special material they're comprised of, I'd expect it to be fairly resistant to almost anything
It's more like anything that can cut though SM armor and hit the chest would have so much impact they would die instantly.
But that said they are slow as fuck in the cinematic
Its the same as how you could have an entire helicopter filled with SAS special forces.
But a single missile strike to that helicopter and they are all dead.
Same rule applies here, war is random.

Pressure-treated down from any and all available nutritional sources by the Munitorum, it has no discernable flavour apart from a faint, mucusy aftertaste, and it looks like grey-white putty. Slab, as it's known to every common Guard lasman, comes canned and it comes freeze-dried, it comes in packets and it comes in boxes, it comes in individual heated tins and it comes in catering blocks. Company cooks slice, dice and mince it, and use it as the bulk base of any meal when local provisions are unavailable. They flavour it with whatever they have on hand, usually foil sachets of powder with names like groxtail and vegetable or sausage.

Ironically of all the legions, the legion specialised in espionage is by far one of the least nuanced 
Because I read that some of their Warbands think they are indeed loyalists, others think they're pretending to be loyalists, some think they're just testing the Imperium, others think they are meant to tear it down, and the rest are a hodge podge of various degrees of thinking they're actually supposed to be traitors but in different ways. and that they tend to end up shooting at each other due to not knowing who is on what side or even what side they are supposed to be on.

The first time it was just the Tallarn, who beat them after taking a virus bomb without flinching, and the second time Tallarn allied with fucking Biel-Tan to yeet them into the Warp
People don't really realize that the IW were less useful than the Dark Mech and Daemon hordes on Terra 
Besides the smurfs these two loyalist chapters seems to be doing quite well.
The Blood Ravens are butchered and facing more conflict in their recruiting worlds
The Charcharadons are never doing well 
Do not underestimate the magpies they are quite resilient and Gabriel Angelos especially I bet you they will regain their numbers quick enough as for the Chadcharadons they have become the thing slaneesh worshipers check under their beds for.
They're still barely dredging along in the hell that is the Ghoul Stars
The Carcharodons are doing worse than any chapter that isn't dead lol
