Water in datacenters is used for cooling. It absorbs heat and is pumped out without being reused, then dumped into the same sewers that other water is. You can't directly use that water because it'll accrue heat in whatever it passes through and most things aren't made to handle getting heated up like that. It also fucks up the biome of wherever that heated water ends up

Not to mention what they have handling it might leech weird plastics and metals stuff into it since it's cheaper to use those things to contain and handle water than ones that are food safe (which might also be more difficult due to the heat)
