There used to be this tiny restaurant that was open for lunch near my high school that had a croquettes meal for like $3

Vegan, small container, bed of rice with tempura fried veggies and a croquette made from a mashed potato mix that was panko breaded and fried

Insanely delicious and idk where to go to get it now because the old couple that ran it retired and shut it down
