Not trying to insult you or anything, but there's plenty of little nuances that not everyone is really thinking of and they're just defending themselves from constantly being in these scenarios.

Play brave, learn how to play with risk and stop thinking too much. If you have the damage and the appropriate build, remember what pieces of your build are working. Concern yourself with spreadsheets and all that another time.

If you need help with developing ypur defense, throw yourself into the pit over and over and get used to it.

Get used to recognizing enemy range in melee when outnumbered, get accustomed to confidently blind dodging, etc. Think less and just do. The thinking can come later, you're trying not to die.

If you want to go faster off of sprinting and all that basic movement, people run knife with appropriate perks and blessings on zealot of all classes, you'll be fine in most cases.

And you can do this between shroudfield builds, book builds and fury of the faithful builds.

It has enough stagger to just make weaker enemies experience the hitstun you need and the attack speed to finish the job between both variations of the weapon. Knife rewards ppl for understanding their movement especially because it's so extremely fast as a melee option.

Barring modifiers of course but in most cases some heavy attacks to the head is enough.

Or a push attack to the head. Whichever comes in the moment

You can have mobility in 80% sure. I just can't think of a single stat I'd be willing to waste to 60% for a combat blade of all things. Never tried it.
