Mobility is almost always the dump stat. Unless the weapon has defence, then that's the dump stat. You get max dodges at 51% mobility and after that it just gives something like .01% further dodge distance or something unnoticeable

I'd never dump ammo over mobility. I think the ONLY vet weapon I would dump something other than mobility is powersword. Its mobility is such ass that I want as much help as I can get. Dump cleave targets instead since with the activation you automatically get max targets
