Durable is just a 2nd damage stat that some enemies use. Some enemies take damage from both (usually with a multiplier on durable damage) and some only take damage from durable. It's unlisted for each weapon but the default is 10% of the base damage. Laser Cannon seemingly has equivalent or higher durable damage than base (Spear does this too).
