Itās darker than I prefer but I like it. Seems like he dials in the roast to the beans (I assume most do?) so there is bag to bag variation? I struggled with the chiroso after singing its praises not sure what happened there. The pink bourbon is superb. Iāve been using #23 as if itās seasoning, adding a few beans to anything thatās boring.

Before I found this discord I was drinking the darkest roasts I could get my hands on so maybe thats why Iām less sensitive to it

So maybe this hellish landscape really is the future...
and like north carolina coffee is still dope or whatever, but let's be real, if you've got NORTH in your name, you don't get to be the South (again, highly objective and nuanced)

Tried a 7g cup from lance and 7g cup from Brian Quan and I think with this sey, I prefer the BQ (which is finer than v60 vs coarser) and then half dose, wdt then at a minute repeat

David and I met BQ briefly at expo. His buddy brewed a wave washed sidra and I didnāt like it - a loud mineral flavor. BQ brewed but added a melodrip and I really enjoyed the cup. David said it was way more balanced

Welcome to ATL!! If youāre on the Westside (I live here!) you should visit auxiliary if itās not too far for you. They have had roasters like Hex and Sorelina which are generally pretty light. Not a ton of UL options in ATL tbh.
It was at the sworks/moonwake booth so they were using sworks dripper

I really like utilizing fresh water rather than having it sit in a tank. Iām sticking with my flair until thereās something tankless and more polished.
I suggest buying used, might need to swap o rings (I have some I can mail you). There are also Black Friday and CM deals.
Robot also worth considering if you can obtain one.
My work flow for the flair is lift the lever and power it on and make some soup or filter. Boil water and heat cup, prepare milk if needed, pour, dump hot water, stick it on the scale making sure nothing is touching the sides or your weight measurement gets impacted by your pull.
Pull shot, remove cup, place drip cup (huge mug with a broken handle) turn off espresso (I have it plugged into a smart plug so I can kill it remotely with a timer or on demand)
My shots are a lot cleaner now with the introvert step down basket

Drank a lot of espresso at expo. I only liked the ones pulling soup the rest just seemed no bueno on the palate now
The best soup is still Oxo atm. On a machine soup was inconsistent - on/off water flow, turn this lever, push that button etc resulted in mistakes by people far more pro than me

I think my roast on Pepe was enough to show I did really well. I choose a slightly darker version that I thought would be more open by show time. I was a guest brewer at Roest so not on my equipment or water.

Itās not a mistake on the roast. I just donāt like the green as much but that shouldnāt stop people from enjoying her coffee who might like it.
Aida Battle will be freshly roasted to order. It will be roasted at the end of Omni light almost start of UL territory (134 agtron on my Omix).
This is the lighter end of Thankfully roasts, a pinch lighter than Sey, about where TPC Omni option is
The Honey Gesha is a lot lighter at 148 agtron. I am going to offer it at $15/100g.
I am keeping the cost really low on this coffee to spread the word and spread the love
Well that was unpleasant. Went a bit finer than typical but not fine enough. As I feared water just started leaning into the puck and then out of the portafilter. I probably need to go a lot finer if they can pull it off on the robot which is similar
Now I have to clean up all this coffee juice
Output wasnāt bad though I missed the initial output since it went on to my scales
I just ran the maximum fill volume through 20g since itās like 90mL
I am splitting some with my friends who lives in other state and i think we might have froze it too early lol
Yeah i find it does need a full 3-4 weeks to rest at room temp.
But it stays juicy for a month or more imo
i was struggling to find the tasting notes on the wush wush when i brew but yeah i think we prob only rested it in room temp for a week or two
and it just has been sitting in the freezer as i work through the stock pile 
though there isn't any vegetal or a "too light" of taste, which was something i was afraid of that i didn't rest it right
Today I did a soup shot and fairlife chocolate milk in the nano foamer pro for my wife.
Tasted it and not bad but this choc milk didnāt steam like regular milk
can confirm. But otherwise the robot was such an easy breezy beautiful covergirl. I miss it. o well, BACK TO SOUP.

PNG is stone fruit that to me is like apricot, champagne like acidity, and some kind of cola or spice depth happening.
Java is interesting but I struggled with tasting notes. After resting/tasting a bunch. I narrowed it down to Guava fruit, lots of sweetness too that comes through like caramel, and this tartness from green apple

So people were complaining. H&S sent out an email confirming they roasted some coffees a little less UL - still light. I dont think the email said why. I think some green isnt meant to be UL and also sometimes cups are just better not pushed too light
In a way it helped because it made me more sensitive to astringency so I pick up on it a lot faster. Sucks bc Im like oh its astringent and people look at me crazy
Theyāve always roasted some beans that are not ultralight. I only just recently realized my favorite beans for espresso from H&S were ālightā

First impressions - much larger than I expected. Seems built well. Packaging and build quality sufficient. I think itās all metal except the base? Need to re check
Steam wand - cool to touch love that. I immediately swapped to the 3 hole tip. Lots of motion on it but will take getting use to - itās also been a long time since I manually steamed milk
Steam is powerful. Way more powerful than my Breville dual boiler. I didnāt even crack it open all the way to steam I would have shot the milk out of the pitcher
Took maybe 5 minutes to get to full pressure and then it just held that pressure on its own.
I would think I could steam quiet a few 8oz lattes with one full tank
That sounds so much better than the Bellman I used for years with my F58. š¤

Base confirmed plastic. I see why - the boiler is HOT. So the base is large plastic that does not get hot and to limit you bumping into the hot part.
When you fill water you need to wipe the top before close it if any gets on it or it will spurt little steam bubbles from under the lid.
Still ultra powerful for me. Iām using the pitcher that came with the Breville dual boiler. Probably doing 180-200ml of milk? Both times now Iāve immediately over aerated and had to try and save it. Still thick milk
I wonder if Iām letting the temp on the boiler get too hot and I need to purge more before starting š¤

I have these as well and decided not to sell because itās so close to the cost of shipping
I was experimenting with it last year, used the more recent LH right side up recipe. To reduce astringency I bought the flow control cap and reduced temperature to 80-85f.
In the end I preferred my French press the AP and of course orb won for travel.

I can share my recipe if anyone wants to try. Been getting very clean and well extracted cups even with UL coffees

Whatās the recipe? I have one too
Not an orb guy so can't speak to that! Here's the receipe:
Grind medium to medium fine ish (as a point of reference, fairly finer than what you would use for Shoebox QC)
Attach the prismo with the metal mesh filter and then a paper filter on top of it.
Add coffee (I use 12.5g dose)
Pour 190-205g of water (depending on desired level of intensity and depending on roast level). Use 92-96c water. If you have a melodrip, you can also use that to limit agitation when pouring water in.
Wait until 3:30 to stir (I do a couple of passes to stir everything up, nothing too aggressive)
Start pressing around 4:00-4:15
Finish pressing at 4:30-5:00 ish min
For true UL roasts (like Shoebox), I'll do an extra stir of the coffee around 1:30 and let it steep until 4:30 or 4:45 before pressing
12.5g dose. I approve this message. Less coffee more often
Iām at the point where if I donāt love it. I donāt finish it. Just make another one later

Weāve been trying Boxcar Stella these past few days. I finally found a bean that both my wife and daughter like (they tend to prefer sugary, syrupy concoctions). It tastes similar to Alma Soulmate, just a tad less caramel (which is very pronounced here too) and maybe a bit more forgiving (with Alma, I found I had to add just the right amount of milk and sugar to transform it from coffee to gold. Anything less wouldnāt do).
I pulled a soupy shot today, despite almost choking the machine yesterday with similar grinder settings. I thought Iād hate it and have to remake it, but it brought out some major nutty flavors, which arenāt on the package. I liked it though.
Espresso is great. One moment pulls great the next minute you choke the machine or 3x fast

T90s, regular v60, m98v - I was at about 520 micron
Donāt transfer this micron to your grinder. Just showing we did go a little finer with the Neo but nothing crazy
I should add Neo was bloom plus one pour controlled at 6ml/s
v60 was same bloom + one pour but yeet pour 10+ ml/s

The coffee closed up on me during world of coffee but the sweetness was still big time. Like hit this lull in the resting period where it was open lots of flavor closed and then opens back up

My gen 2 experience is that itās around 20-15 and that the dial in depends on which direction you arrive at 15 and once you dial in you better not move it. I imagine that would be magnified with MPs š

What setting did you use?
I used to hate it too. Getting a stepdown basket helped a ton. It made it so grind size didn't have to be so perfect. Instead of the Sweet spot for espresso being 12-18, it's now 20-35. One notch on my DF83V can change shot time by 1 second, but previously 1 notch might be 3 seconds different.
Itās like dependent on your puck depth and diameter too. Iām happy with the step down now
I did a 10. Just did a 15 with decaf and undrinkable battery acid
Dialing in went from 3 shots to 1 shot usually.
Which on those 125g bags matters a ton.

I never tried the MPs for espresso. For espresso I found that decaf needs to be finer
But with the df64 because itās stepless and imprecise I found that the direction I approached a rare mattered. If I was dialed in I didnāt want to touch it
Just finished this morning. No line at our precinct
Iāll add that I didnāt find the p80 to be that much better. Dial is smoother which helps but still a very small espresso range you are dealing with.

Really good complexity, perfect amount of tartness, good body even with A4z, and roasted perfect my taste
Itās become better 6 weeks plus off roast

I am curious to compare Filter3.0 to gabi brews. I have finally been dialing in my Filter 3.0 process and some cups just hit the spot.

I feel like the lower bypass of the Gabi would make an interesting comparision to the no bypass of the Filter3.0
