Stellow was great! I enjoyed the vibe with a long bar to sit at and enjoy talking coffee.

Crew was all really nice and working really well together handling the non stop rush. I ran operations for so long it’s calming for me to see a good crew.

Really wanted to check out stellow with Zo

Let’s go again!

#

It’s such a hard line to walk where your beans to be easy to brew and to develop flavors but not make it roasty

#

Been going back and forth on wanting to make something light and easy to extract vs something ultra light

#

Most of the people who I give coffee fall in the camp of just needing it to be easy

#

What do you think about Aviary’s roasting style? @jaunty ice

jaunty ice
# nova wadi What do you think about Aviary’s roasting style? <@663076930999812096>

It’s darker than I prefer but I like it. Seems like he dials in the roast to the beans (I assume most do?) so there is bag to bag variation? I struggled with the chiroso after singing its praises not sure what happened there. The pink bourbon is superb. I’ve been using #23 as if it’s seasoning, adding a few beans to anything that’s boring.

desert dawn
#

season it up

nova wadi
#

Before I found this discord I was drinking the darkest roasts I could get my hands on so maybe thats why I’m less sensitive to it

jaunty ice
#

Like I’m not used to dialing it in so I’m not making the adjustments I should and I don’t feel like experimenting- I just relegate the too dark stuff to milk drinks

nova wadi
#

Eh I don’t dial much either

jaunty ice
#

Thanks to Zo’s encouragement I’ve been grinding finerā„¢ for the dweller roasts with a bit of success. But if I’ve reached that point I’d rather just have the roast go a little longer.

#

I think my absolute favorite bag of beans at the moment is my shoebox Burundi and I ordered three more bags

I found it cheaper at perc than amazon

woven stone

Yall see the coferment drama with perc/in general on Reddit?

#

It kinda makes sense honestly. Apparently most fruits don’t impart that much flavor to the green beans

jaunty ice

Wait a minute some ā€œcofermentsā€ are infused 😳

Look I'm not saying The South is Rising Again, but... (mods furiously opening their context menus to ban me just in case)

#

...Thankfully is roasting up some real bangers down yonder (even non EL ones!), Roasters cropping up all over ATL and various FL 'burbs (s/o zo and my fellow "ggles" guy wiggles), and in my highly nuanced and objective opinion, Atlanta coffee shops are improving more rapidly than atlanta house prices. So maybe this hellish landscape really is the future...

#

and like north carolina coffee is still dope or whatever, but let's be real, if you've got NORTH in your name, you don't get to be the South (again, highly objective and nuanced)

desert dawn
#

Worse to me is how many dont even mention coferm. They just do it.

#

Like by that I dont mean roaster, the producers/farmer level will add stuff to coffee to flavor it

gaunt gulch
#

Tried a 7g cup from lance and 7g cup from Brian Quan and I think with this sey, I prefer the BQ (which is finer than v60 vs coarser) and then half dose, wdt then at a minute repeat

jaunty ice
#

buford hwy farmers market in doraville has it on occasion near the dumpling wraps to the right of the mochi. H-mart often has it though supplies have been limited recently.

desert dawn
# gaunt gulch

Looks pretty! So far I do 8g or 10g. I find 10g to be a little more forgiving.

It’s funny you mention liking BQ recipes.

David and I met BQ briefly at expo. His buddy brewed a wave washed sidra and I didn’t like it - a loud mineral flavor. BQ brewed but added a melodrip and I really enjoyed the cup. David said it was way more balanced

Has me debating using my melodrip again

gaunt gulch
#

Lol everything feel like comes in cycles, I do v60, then ORBover, then v60 melo, now deep27.

#

I think that bq has been a brewer of sey for so long that his recipes for then specifically work pretty well for me.

Just landed in ATl and staying in West midtown. Suggestions for coffee shops? I like ULs, washed or natural is fine

cedar olive
#

Welcome to ATL!! If you’re on the Westside (I live here!) you should visit auxiliary if it’s not too far for you. They have had roasters like Hex and Sorelina which are generally pretty light. Not a ton of UL options in ATL tbh.

Pepe was hitting that weekend. Overall loved Pepe that weekend it was great to taste it against all the other roasters. The png was completely closed and didn’t enjoy it.

Weird thing was at home the PNG was hitting and I thought going to be the crowd pleaser. As soon as I got home tried them all again and PNG was great again šŸ¤·ā€ā™‚ļø

nova wadi
jaunty ice
# desert dawn That’s a big crack

If I twist it closes. It’s fine if I do t let it get too high. I could probably use some kind of food safe adhesive/tape? but also I think when it bites the dust I’ll just buy another automatic

nova wadi
jaunty ice
#

I was wondering if they were already there or cracks

#

The high up cracks don’t really matter since water doesn’t accumulate that high

nova wadi
#

Idk imo if your product is cracking from just regular use you should replace it

#

But that’s my view

jaunty ice
#

Oh definitely but they all crack I’m sure

#

So they can’t replace it since their business would fail

desert dawn
nova wadi
#

Haha true

jaunty ice
#

I’m like an every other day+ espresso machine user now. I don’t recognize myself. I’m glad I didn’t buy something expensive over $1000 šŸ˜®ā€šŸ’Ø

nova wadi
#

Kinda want to break my espresso machine back out

jaunty ice
#

I’ve been exploring some of the peanut roasts on espresso. I don’t think I quite have the right grinder for it though

nova wadi
#

Yeah I want to try those as well. Also I’ve never used my DF64 MPs for espresso so just curious what it would taste like

#

Shoebox espresso probably isn’t good but I still want to try it for myself

jaunty ice
#

When maxwheel roasted for jimmy beans that’s when I figured out that there’s a limit on how light you can go and still be able to add milk.

#

But I think dweller usually posts blinding photos of his resulting espresso cup

nova wadi
#

I kinda want a flair

jaunty ice
#

I really like utilizing fresh water rather than having it sit in a tank. I’m sticking with my flair until there’s something tankless and more polished.

I suggest buying used, might need to swap o rings (I have some I can mail you). There are also Black Friday and CM deals.

#

Robot also worth considering if you can obtain one.

#

My work flow for the flair is lift the lever and power it on and make some soup or filter. Boil water and heat cup, prepare milk if needed, pour, dump hot water, stick it on the scale making sure nothing is touching the sides or your weight measurement gets impacted by your pull.

Pull shot, remove cup, place drip cup (huge mug with a broken handle) turn off espresso (I have it plugged into a smart plug so I can kill it remotely with a timer or on demand)

My shots are a lot cleaner now with the introvert step down basket

nova wadi
#

I really don’t like having to preheat so I’d want the flair+

jaunty ice
#

Old photo but I love this mat

jaunty ice
#

And you need to boil water to your desired temp and add it doesn’t heat water in the chamber

nova wadi
#

It pre heats without water though right? Something I hated with my picopresso was having to use my coffee water I boiled just to pour it out

jaunty ice
nova wadi
#

Yeah that sounds fine to me

jaunty ice
#

That’s a knock against the robot too

nova wadi
#

Flair+ seems ideal. Do you notice a difference in soup with RB vs Flair?

cedar olive
#

I haven't been brewing at all on the gabi recently....v60 just been too good. But also to my surprise, I've found an incredible aeropress recipe that produces insanely clean cups

jaunty ice
desert dawn
#

Tbh, I always think about tinkering with espresso. But I remember the work.

Drank a lot of espresso at expo. I only liked the ones pulling soup the rest just seemed no bueno on the palate now

#

The best soup is still Oxo atm. On a machine soup was inconsistent - on/off water flow, turn this lever, push that button etc resulted in mistakes by people far more pro than me

nova wadi
nova wadi
#

that and ORB

jaunty ice
nova wadi
#

ty ty

#

If its solid I may be getting one

desert dawn
#

To me v60/d27 is the easiest so it gets the most use.

Oxo too much work and sucky clean up

jaunty ice
#

What filters for deep 27? Edit: oh cafec deep 27 filters

#

I really don’t mind the oxo work flow, with two filters it comes out cleanly into the compost. V60 easier and less parts though

nova wadi
#

Yeah I dont mind oxo either

#

today Ive done 1 V60, 1 Orea O1, 1 Oxo, and 1 Deep 27

#

Variety is the spice of life they say

jaunty ice
#

I do not enjoy dialing in. I do enjoy as many cups as possible with as many different beans as possible

nova wadi
#

All of these were different beans also

#

Orea O1 - Aviary #024 Washed PB
V60 - TPC Inmaculada Wash Geisha
OXO - Frequent Washed PB Decaf
Deep 27 - H&S El Diviso PB

#

Didnt realize it was a PB day

jaunty ice
#

The agricola is a touch toasty but quite tasty. I see it on the airworks coffee with ply

#

I paid $25 for 100g... hmm maybe a different agricola panama washed gesha

desert dawn
jaunty ice
#

Usually once over the compost bin if it’s more than a bit

desert dawn
#

That that’s about what I have to do too

jaunty ice
#

Coarser grounds also easier to deal with than soup fine

desert dawn
#

All- if my labels come in time I’m going to release coffee Saturday 10am.

I may release some other coffee under ā€œOopsā€ that does not have a label.

Will let you guys know by Friday

gaunt gulch
#

@jaunty ice I tried my sey Peruvian sl9 on the deep 27 (12g) and it was tasty (despite being not quite dialed in).

#

I can bring some by the hospital if you're interested in trying

gaunt gulch
desert dawn
# gaunt gulch How did it compare to others?

I think my roast on Pepe was enough to show I did really well. I choose a slightly darker version that I thought would be more open by show time. I was a guest brewer at Roest so not on my equipment or water.

I think you guys tried one version pretty fresh off roast at my place?

desert dawn
# gaunt gulch Got that local pickup option set up...

I didn’t do local pick up. I’m still thinking about it. My schedule sucks and I would hate to roast a bag and it sits cause we can’t meet up

I did add free shipping on orders over $30 AND I took your advice I’m releasing ā€œmistakesā€ with this release.

ā€œMistakesā€ will be released under ā€œoopsā€ category

gaunt gulch
#

Lol I'm 1000% on board with the idea but I don't want credit for calling it mistakes lol

desert dawn
#

This release will have an ā€œOopsā€ from Aida Battle that you all tried. You guys liked it and I was on the fence about it.

I’m going to do it for $10/100g - will not have official label on it at this time.

It’s not a mistake on the roast. I just don’t like the green as much but that shouldn’t stop people from enjoying her coffee who might like it.

Aida Battle will be freshly roasted to order. It will be roasted at the end of Omni light almost start of UL territory (134 agtron on my Omix).

This is the lighter end of Thankfully roasts, a pinch lighter than Sey, about where TPC Omni option is

#

The Honey Gesha is a lot lighter at 148 agtron. I am going to offer it at $15/100g.

I am keeping the cost really low on this coffee to spread the word and spread the love

jaunty ice
# nova wadi ty ty

Well that was unpleasant. Went a bit finer than typical but not fine enough. As I feared water just started leaning into the puck and then out of the portafilter. I probably need to go a lot finer if they can pull it off on the robot which is similar

Now I have to clean up all this coffee juice

desert dawn

I have already roasted/tasted these so they will be up coming unless sometime changes.

By change I mean if book an event I will allocate these coffees there. I don’t have enough inventory of green to release publicly and supply a pop up

-Rexon Raguni, Papua New Guinea washed
-From the same Juliana as the honey Gesha I have a Java

#

Both are in very limited quantities

#

PNG is stone fruit that to me is like apricot, champagne like acidity, and some kind of cola or spice depth happening.

Java is interesting but I struggled with tasting notes. After resting/tasting a bunch. I narrowed it down to Guava fruit, lots of sweetness too that comes through like caramel, and this tartness from green apple

I got some other things in the pipeline too that some of you may see samples of 🤫

H&S decided to roast some coffees a little less UL

desert dawn
jaunty ice
desert dawn
#

I think even the lighter options that Bana buys were less light?

#

Flair E wizard came in today

First impressions - much larger than I expected. Seems built well. Packaging and build quality sufficient. I think it’s all metal except the base? Need to re check

Steam wand - cool to touch love that. I immediately swapped to the 3 hole tip. Lots of motion on it but will take getting use to - it’s also been a long time since I manually steamed milk

Steam is powerful. Way more powerful than my Breville dual boiler. I didn’t even crack it open all the way to steam I would have shot the milk out of the pitcher

Took maybe 5 minutes to get to full pressure and then it just held that pressure on its own.

I would think I could steam quiet a few 8oz lattes with one full tank

#

Flair E Wizard, Day 2

Base confirmed plastic. I see why - the boiler is HOT. So the base is large plastic that does not get hot and to limit you bumping into the hot part.

When you fill water you need to wipe the top before close it if any gets on it or it will spurt little steam bubbles from under the lid.

Still ultra powerful for me. I’m using the pitcher that came with the Breville dual boiler. Probably doing 180-200ml of milk? Both times now I’ve immediately over aerated and had to try and save it. Still thick milk

#

I wonder if I’m letting the temp on the boiler get too hot and I need to purge more before starting šŸ¤”

gaunt gulch
#

More than orb?

woven stone
cedar olive
# gaunt gulch More than orb?

Not an orb guy so can't speak to that! Here's the receipe:

Grind medium to medium fine ish (as a point of reference, fairly finer than what you would use for Shoebox QC)
Attach the prismo with the metal mesh filter and then a paper filter on top of it.

Add coffee (I use 12.5g dose)

Pour 190-205g of water (depending on desired level of intensity and depending on roast level). Use 92-96c water. If you have a melodrip, you can also use that to limit agitation when pouring water in.

Wait until 3:30 to stir (I do a couple of passes to stir everything up, nothing too aggressive)

Start pressing around 4:00-4:15

Finish pressing at 4:30-5:00 ish min

#

For true UL roasts (like Shoebox), I'll do an extra stir of the coffee around 1:30 and let it steep until 4:30 or 4:45 before pressing

desert dawn
#

12.5g dose. I approve this message. Less coffee more often

cedar olive
#

Has moving to 12.5g doses somehow justifed me drinking 4-5 cups a day?

#

Maybe.....

desert dawn
#

I’m at the point where if I don’t love it. I don’t finish it. Just make another one later

The restaurants along Buford highway not far from Stellow is one of the major attributes that drew us to Atlanta.

If you are visiting Piedmont park it might be nice to visit Academy and see Virginia highlands. From Piedmont park you can access the beltline and walk south toward krog st market.

I’ve been struggling with the Colombian Gesha from Big Sur (San Antonio) and finally made it with the K ultra and it was much better.

June 13th, y'all in for a meet at my place in Lilburn?

I will be out of town that weekend, but no worries everyone should hang!

Also, I’m going to drop a Burundi from Masha washing station today. It’s really interesting I get this crisp apple like acidity which is pretty refreshing, then this tannic taste with an earthy turmeric finish. Still I would call this very clean and complex

From the same producer I have a washed Java - it’s also really sweet

The coffee closed up on me during world of coffee but the sweetness was still big time. Like hit this lull in the resting period where it was open lots of flavor closed and then opens back up

Also, I was on a Lance call this morning and he said some scientists he’s working with found that using the blind shaker for 10 seconds on fresh coffee causes 30% co2 loss.

I’m going to try this on fresh coffee I roast

DF64 with MPs

Shoebox Yessica Parra Aji is interesting. Opened it today. Tastes like there is a bit of a prolonged fermentation process even though it’s ā€œwashedā€

Will try in k ultra and maybe with lower ppm water

nova wadi
#

I have no clue what grind setting to use

#

Haven’t used my DF64 for spro yet

desert dawn
#

Start coarser and then go finer

#

Are you going to pull 1:2 or I would probably do 1:2.5+ for the lighter stuff

peak field
#

Solid stuff

jaunty ice
#

My gen 2 experience is that it’s around 20-15 and that the dial in depends on which direction you arrive at 15 and once you dial in you better not move it. I imagine that would be magnified with MPs šŸ˜‚

nova wadi
#

Went way too fine, barely got through the puck. Full on battery acid… but I don’t hate it šŸ˜‚

#

I don’t miss the espresso faf

sharp jasper
# nova wadi I don’t miss the espresso faf

I used to hate it too. Getting a stepdown basket helped a ton. It made it so grind size didn't have to be so perfect. Instead of the Sweet spot for espresso being 12-18, it's now 20-35. One notch on my DF83V can change shot time by 1 second, but previously 1 notch might be 3 seconds different.

jaunty ice
#

It’s like dependent on your puck depth and diameter too. I’m happy with the step down now

nova wadi
sharp jasper
#

Dialing in went from 3 shots to 1 shot usually.

Which on those 125g bags matters a ton. keknervous

nova wadi
#

I think I need to stick with ORB soup ehhhh

#

Was fun to break the spro machine back out though

#

Might do another later

#

Got to go vote keknervous

jaunty ice
#

But with the df64 because it’s stepless and imprecise I found that the direction I approached a rare mattered. If I was dialed in I didn’t want to touch it

jaunty ice
#

I’ll add that I didn’t find the p80 to be that much better. Dial is smoother which helps but still a very small espresso range you are dealing with.

desert dawn
#

I just got home from voting too.

sharp jasper
#

If anyone buys from Sworks and plans to attend our meet, I would like to add on plz...
