Radio is pretty solid. They try to be in the medium range. We have plenty of roasters who roast medium or dark. Unfortunately no brick and mortar light roasters

My sworks step down baskets came. @desert dawn what did we say we were going to do to tamp acidity? Did we come to with something? I wonder if going to 1:4.5 INPUT would balance
We upped the dose to 16.5 and did not change grind size. It did not completely solve the issue. Still slightly rough/sharp finish.
To keep 15g dose;
-Did the puck paper cover the entire puck?
-Grind finer
-Increase yield
-Experiment option add a 58mm screen for additional ādrip assistā in the basket.
Itās totally possible to do 15g. Itās just less forgiving till we figure out the hack

Okay, I just went coarser and back down to 1:4. Acidity was very nice. Lots more flavor coming out but still a tiny bit astringent something I wouldn't even mention if I wasn't speaking to y'all.

Robert Asami has been using them with a higher rpm for filter. Iāll use 900 rpm for now. The biggest issue has been dosing at the lowest rpms or normal doses with lab sweets,
Iāve been using the a68 and a4z and itās been pretty good. Feel like Iām missing something with espresso that I could occasionally nail with my 64mm stock df64 gen2. Also hoping it will be better all arounder.
On the EG1 I had trouble going below 800 rpm with ULF in the beginning. I think seasoning improved it
They just take a boat load of coffee to season.
Seems like many people intend to use ULFs. I plan to use the a4z for that flavor profile though I suppose they use ulf for espresso as well
You can use it for espresso, but would be more cautious going to lower than 800 rpm. I donāt know if I like traditional shots in super high clarity. I feel like a little blendy is better

Dialing in this morning. Nothing bad. Workflow is great. Itās quiet. The dial in range for espresso is narrower but I think a68 is unusual for having ludicrous dial in range + stepped.
Made two soupacanos as well. Shoey caballero was maybe the best Iāve had. Minmax Ethiopian honey process a bit muted from what I expected.

I think the marble has a sealant to prevent stains but leaving hot pans on them causes its own stains. Itās fixable, just irritating.

No no I was just reflecting back on a declining temp recipe I recall reading about a year ago when I was learning filter with a Bodum Meilor that had zero temp info. I havenāt tried it and I left my switch in Taipei so I wonāt get a chance to use it until February. I actually appreciate your feedback and Zo Shahās as well.

How does Gititu compare to Gatugi factory?
Its primarily Sl28. Gatugi was primarily SL34. Gititu has more tart but ripe red berry. To me its raspberry some described it as cranberry through out the entire sip, in the middle you get grapefruit mixed with some complexity of spice, and as it cools the finish becomes like cola
But imagine the taste of cola without carbonation of course

When I left California 20 years ago I didnāt realize the rest of the country had a very different Mexican food experience. I learned not to pay attention to where places were operating just whether they were busy and who was shopping there. This store has the best salsa. Meat isnāt bad.

Iām kind of weird about boba tea. First time I had it was off canal st in NYC in 2006 and it happened to be hot. So thatās mostly what I order- few places serve it hot and even fewer do it well

High likelihood the boba will be bad and worst case scenario you get bad tea too. I usually order the black/darjeeling or green milk tea hot 25% sugar with boba. Not clear this place offers. The authentic places have great slushies and add ins like mung bean or taro that are high quality

To give you an idea I when I first started I bought 55lbs of a green coffee from a local Peruvian importer. I went through all of it at 100g batches.
Then I switched to 150g batch size and blew through another 30lbs of coffee at least.
Fast forward to today well over 100lbs and starting to get the hang of it 
Dialing in new coffees is currently the battle
There is a lot to it. However, especially this summer they are in support of small businesses
Shipping is astronomically expensive, it was way cheaper before. I ran an online business in college and shipped world wide.
The only benefit you have now is Shopify or other platforms sharing some of their discounts with you

Itās fermented in cherry 24 hours, pulped without water fermented 24 hours, then washed to white honey process and dried for 35 days
Gesha wants to roast fast but is know for tipping easily. Thatās exactly whatās happening for me

My pfp is a cap I ordered at East Pole, that place is cozy and not too far from me. But haven't had great coffee recently and ordered a yeast process coffee that they made on their automated filter machine and it was so bad. They served it to me at a temperature I would never even use to brew beans like this.

Yes, but the variable speed on the crema loop changes how fast it feeds the beans into the grinder
The original crema loop used discs with different feed rates. Like an 8 hole disc vs 1 hole disc. 8 feeds faster

My favorite cups are the Frankensteins from combinations of leftover beans
I usually have 2-3 open.
And my leftover beans i always use to make a Frankenstein shot of a blend of the last bit of my old bag and first of a new bag. Makes for easier dialing in this way.
Side comment on the P80- I havenāt had a good cappuccino since it arrived. Iāve been struggling to find beans I enjoy this year anyway and I donāt really drink straight spro. It has a touch less body than the conical burr I was using but I wonder if the increased clarity is causing an issue.
P80 does a good job being a counter balance to the A4z though. Had a nice soupacano with a gesha where the A4z highlights some unpleasantness. Iām wondering if I can try modulating brew temperature for a similar result. This weekend I think Iāll break out the A68 and revisit it.

Have you dialed in the same bean with two grinders? That's how I learned the differences between the Niche and DF83V.
Admittedly I need to probably spend more time evaluating feed rate vs dump. The ionizer definitely works better with slow feed.

-This event will be served tasting style. Live pour overs where you come up, talk, enjoy, taste samples back to back. If you like anything Iāll fill up your cup. So will need more yield
-I am on the stainless steel v60 it only comes in an 02 size and the hole on the bottom is dbl the size. So flow is way faster making smaller doses less forgiving.

So I think having a 15g and 20g recipe is worth it. But Iām treating the 20g dose differently.
1st pour 60g bloom, 30s
2nd pour @30s 80g bloom
3rd pour @60s 200g center pour till 260-280g Then start pouring gentle circles to incorporate everything till 300g. Then go back to center pour till 340g
Ya I saw that. I went with SS because it comes in silver and black. So allows me to have two separate setups for two different coffees no cross contamination of flavor. Helpful for when access to sinks is limited

I charge it infrequently. The coffee chronicler reviewed a4z and a5 and he tested how many times you could grind it. Iāve forgotten but I plug it in once or twice a month when itās convenient.

I have a few gripes. Itās easy to knock over, the catch cup sides are thick, it has trouble with doses over 25g as coffee gets stuck in the wipers. But itās quite good and I love that itās battery powered.

Honestly I have had such hit and miss luck with coffee shops, but y'all are giving me hope about the ones here. Portrait was the best I've had in ATL so far, but I've only had a handful of places. Not sure if I can even recall all of them.
Admittedly, I am usually chasing espresso or espresso based drinks and not anything else.
Also, after a week of instant Partners coffee or cruise ship coffee, I'm looking forward to getting back to the mainland. I was in the mountains in the Dominican Republic and the coffee scene was sad. Even passed a farm that grew coffee, but apparently they mostly grow to sell to bulk buyers. Not craft coffee distribution.

We let her decorate it with stickers. If you get one they donāt last forever as their legs get longer. Also, you need to put some weight inside so it doesnāt tip over.
