Hoping to see what my options are here. I am trying to replace my timemore sculptor 064s burrs, and stationary burr screws, which are inside the grinder, were very tight. I tried my best to get them out, which nearly stripped them. I tried the hacky rubber band technique, and even with a well fitting screw driver I'm only making them worse. What can I do?

Did you try some repetitive tapping? Fit your flathead into the screw and give it a few little taps to hopefully break loose whatever seizure is happening

Taps with anything, a wrench, another screwdriver, etc
