Yes for sure!
It's so different it's actually hard to quantify since you have to brew so differently to get in a similar realm.
Negotiated allows higher extraction with coarser grind which helps for intense and clean high clarity brews. But dial in window is a lot smaller as it can clog really easy and get harsh when overextracting .
The bypass of the wave filters will make the brew substantially faster and lower extraction at the same grind size. So for something similar you'll have to grind finer and then you risk astrigency/muddyness from that.
With my preferences I use negotiated for ultralight washed. For funky stuff or darker than ultralight I like the wave as it's more forgiving for coffee that extracts easier.

Honestly I’m not familiar enough with under roasted coffees to know, but that certainly is an option.
That was my first sidra so I’m not 100% on if it just tastes like that or if there was a defect in the roast

Ooooo, something I know. It's basically a macerated wine. So the flavors that are more skin than fruit (dried fruit, savory, more tannins) and it will normally appear a more amber/orange color.
It's one of my favorite categories of wine!!! Since it's basically a white made likea red 🤣

talking about filters, I’ve been using the Abaca (orange) filter for a little while now, and I realized that most of them as of late get clogged even before pouring the coffee. I put some water on the filter and some just take forever to draw down

AFAIK they’re faster flowing than Hario filters but there’s definitely faster if you need… sibarist makes some great filters

Regular coffee, but as said, it happens before putting the coffee in
I usually pour hot water before the coffee so the paper filter fits better and brewer warmer
but there are times in which the water draws down at different speeds before any coffee has been put into it

and naturally, if I do coffee on them when I already know this is a problem they tend to stall longer than other brews
grind is usually 450-500 based on my grinder’s settings

I have been pulling my hair out. I always assume a skill issue...
problem usually exists between kettle and ground, ya know.
Only worry about how filters behave with coffee in them, there are plenty of test where you could fill up two v60s with different filters with just water and one of them flows faster, only to then do the experiment with coffee as your normal pour over recipe and discover the one the slower flow with just water had a faster drawdown.
What make abaca's superior to some hario filters is how the handle fines migration, not how fast they flow. They just don't clog as easily

I have not had the above issue that people are referring to with Cafec. Early December I ordered Abaca and T90 directly from Cafec. The Abaca still flow faster than the T90. I have been experimenting with Sibarist Fast and B3 on cones. I’m starting to like them.
I prefer the abaca's over the t90's as well
I kind of wish I had gone with one of them, I like the nobypass cofee more than V60s after trying them, I find I use my Aeropress with a filter sandwich anytime I want something that's not espresso based.
but I have too much coffee equipment to add another dripper I'll use 10 times a year.
As long as you have a glass v60, just get a switch and get a switch and voila, 2 in 1, and the switch with immersion I would think gets real close to no bypass drippers
I have a switch actually that I use as a ghetto V60
and yea I use it in immersion "mode" more often than not, but I still almost always prefer the cup from the Aeropress
I haven't used my Aeropress in ages

I have an XL, so it's bigger. I do a filter sandwich, paper - metal - paper.
I use 30g of grounds, like a 60-70 on a K6 hand grinder, then I fill to 550g of water.
I fill to 60g first, let it bloom for 20 seconds, then fill to 200g and let it bubble for 5 seconds or so, then fill to 400, give it another 5 seconds, then fill to 550. I then let it sit until the total time from bloom has been 2 minutes, and I slow press it.
I also pour through a mellowdrip

So apparently my new roast approach requires even more rest than before.
I tried a couple test roasts from 12/23 (38 days rested) and they need a lot more time, at least 2+ more weeks minimum maybe more. Since I started roasting, the peak rest time has drifted from ~4 to seemingly 8 now, oops.
I probably wouldn't bother opening the coffee I gave out until late February, probably will peak mid March.

My recipe for ultra light washed or cleanly processed coffees:
I have the highest hole count honeycomb bottom. Sot he 2nd highest hole count overall.
Negotiated flat filters (fold in a x pattern, open and lay on top of the cone, push negotiater in, and rotate and it should seat. Wet with cool water if your negotiated isn't heat safe and push again to seal.
Coffee ~600 um slow fed Zerno Z1 with UMv1 burrs
1/3 dilution TWW light roast in distilled water at 198F/92C
15g coffee to ~255g water
Fold/negotiate filter as mentioned earlier, then rinse with hot water.
All pours using melodrip!
Close valve fully and pour to 50g. Wait a few seconds for brewer to distribute the heat and pour grounds in. (I shake grounds in this time).
Gentle Wet wdt to stir up the slurry and a swirl.
At 40 seconds wet wdt again and swirl. At 50 seconds open valve 1 full rotation (pretty much fully open).
Pour to 130g and gentle shake to level bed (note the 15g of coffee is included in the total weight now since it went in after the water!)
Wait until water level drops to ~1 cm from bed and pour to 190g, gentle shake to level again.
Repeat above pouring to 270g (255g of water total when subtracting the grounds).
Should finish ~2:45 to 3:15 usually.
Mess with small grind size, water temp, and ratio adjustments to dial in for different coffee or roast levels. You might want to use normal wave filters for darker or more processed stuff, the bypass is more forgiving there.
If you're not using a melodrip, you'll need to be careful with clogging the filter and use a lot coarser of a grind likely.
Also smaller doses might help avoid clogging with a thinner coffee bed if you're not using a melodrip. I can get away with a thicc bed though with the melodrip and fairly unimodal grinder
When using wave filters, I often use the valve to slow things down as it runs waaaaay faster. You can get creative there and mess with the valve through the brew to modulate contact time

If you accidentally choke the Met, it makes a big ass mess to unchoke it, on the Muvna, I can say, dammit...and crank more...and get my oil slick 18 BAR espresso, or back off the crank, and remove the PF without dumping water everywhere.

I find them different for different things, the Muvna is still my "fun" machine, and the dialing factor is way better, but once I've dialed in a coffee for a given basket, if I'm making coffee for several people, the Met is way better workflow.
As someone who roasts small batches of 6 or 7 different beans at a time, though, I probably use my Muvna more, but early in the morning...If I'm dialed in...Met wins the day.

I’ve been splitting mine in half just eyeballing but I’ve been seeing 1/3 dilution recently and idek how I’d eyeball that
I don't recommend trying to split the powder as it's not homogenous so you might get an uneven amount of minerals.
You can mix up multiple gallons at a time or if you don't want as much prepared at once you can do what I do and just mix in one gallon and use as a concentrate. I just have one full strength gallon and weigh my kettle when I top off with 1/3 of the mineralized water and 2/3 distilled.

I have a 3 gallon and 5 gallon jug from Walmart that I use to mix
I will say, some have had success splitting it up with similar results to not faff about it, so maybe worth trying idk
I had very different results between gallons the two times I physically split the powder. It probably is totally dependent on if/how each sachet settles
I've never tried it, but it just makes sense that splitting it up probably isn't a good idea, no way to tell how much is of what is where

They are both great. Zp6 is a little more clear where the 078 has a little more body. Both have a similar acidity presentation though. Very comparable in quality imo. My wife who drinks a filter coffee every day can't tell the difference in a blind tasting.

Never been back to foxtail, it’s been at least a year or two
I went to foxtail when they first opened in like 2016 or 2017 I think.
They are actually what got me into specialty coffee! They had actual light roast ethiopian nat back when the blueberry bombs still existed.
Within maybe 6 months or so, they sort of blew up bc of that 2010s wood everything + Edison bulb hipster aesthetic and very quickly commercialized and went to shit.
They had one location for 6 months to a year and then opened up a shop at UCF. I went there for that blueberry bomb eth on cold brew regularly. Very shortly after expanding to UCF, the coffee turned to shit.
Then they opened up dozens of locations everywhere and, started charging awful prices, and the quality of the drinks in general are bad too not just the coffee. It's absolute dogshit.
Then apparently the whole scandal with the owner or manager or someone sexually harassing employees and them protecting them.
Pretty much everyone who lives in Orlando who isn't a tourist or recent transplant despises them lol
A great summary. I never went to them early on, sadly. My dad is into roasting, so he took a tour of their roastery. He came back super excited talking about how good their coffee must be because the roasters really know their stuff.

The beans for that short period early on were lighter than lineage if I remember correctly. Probably dark af compared to what I drink these days but well within "American light" territory I think.
My memory is probably biased on how good it was since it a inexperienced still. But I definitely remember a notable shift in quality that was pretty rapid.
I figured they'd still do serviceable milk drinks or something but nope even the few my wife or I have gotten over the years have been awful.

I honestly think I blocked it out of my memory lmao. But I think I remember it being a bad mix of roasty and lacking of any substance. Even though I drink extremely light coffee, at least "good" dark roast has body, texture, chocolate, nuttyness etc going for it.
But instead I think it was harsh, roasty, bitter with none of the positive character, maybe both a bad shot and bad beans. Now that I think about it I think my Wife got a pumpkin spice latte a few years back and the syrup was awful. It tasted like they tried to make it in house but did a terrible job balancing the spices and it was chewing on a clove.

Do you have a grocery store with an RO thing for filling up 5 gallon water bottles? Publix in Mount Dora has an RO one for 2 bucks for 5 gallons of water. I fill up bottles and remineralize them.
If you have RO you could just use RO but if you pair it with your zero water filters they will last alot longer that way
Countertop RO paired with a zero water filter is a good way to get 0tds base water
Imma have to look for this at my Publix I just buy distilled there

I bring my own 5 gallon water bottles and just refill them, and according to the wording on the unit, it's reverse osmosis water, not just like charcoal and sediment filter.
The one at Walmart seems to just be sediment and charcoal, but it's 50 cents for 5 gallons

RO can have a pretty significant swing of minerality, some can be very low while others can upwards of 20ppm
That isn't necessarily bad or good, but measurable and does effect outcomes in one direction or another
I just know it's a lot better tasting than tap here 🙂

a few of us are home roasters, I have no experience traditional gas drum though
wonderfully, it’s opened up quite a bit and the notes are on point. Overall impressions are that it’s quite vibrant and there’s a lot more sweetness than I’m used to on the back end - likely due to dripper selection. The raspberry continues to linger! 😋
Yeah with the flat bottoms you can definitely get a lot more sweetness! Good to see the raspberry opened, Initially I had "white raspberry" because it was other roasts were so soft but I developed this one a bit more and felt it was strong enough to upgrade to normal raspberry lol

I am going to brew it like shoebox, but I like to do a 5 pour to test and then adjust if it needs less aggressive pours (4 pours)
I use the recipe I gave you for the sworks, that's my normal one
These will be a bit more soluble than last time overall. Maybe the kenyas are still pretty light might need 5 pours for those 2 lol

How do you like the Meticulous? Were you a backer or recent retail buyer ? I've been patiently waiting for mine to arriver for over a year now.
I like it, it isn't perfect, but it's a very solid machine.
It's really good once you've dialed something in, due to it's design the consistency is unmatched with a manual lever. That said, because there isn't a way to change your profile on the fly, if you've mis-dialed a profile for a bean/basket combo and choke the basket, you have to release the piston and pull the PF, dumping water out, which kind of makes a mess. Most of the water lands in the tray, but it still kind of makes a mess. When dialing it in for a new roast, I now start a bit more coarse than I think it will need to be and incrementally move it finer to prevent that.
The portafilter is also weird, the ears are a smidge too tall (0.5mm) and too wide for two other "standard 58mm" machines I've tried it with, but only by a tiny bit, so normal portafilters fit the Met just fine.
I bought it from an OG backer who gave up waiting and bought a 7500 dollar ACS lever, deciding that when his Met showed up, he was just gonna sell it.
Will you be bringing it to the next event? Would love to see and try it in person along w the zerno z2. I pulled the trigger on the bookoo 80mm but then decided to cancel that order. I really didn’t like what I was seeing from the beta testers. I have the z2 in my cart but having a hard time pulling the trigger on that price tag.
If nobody else is brining one I'll bring my Met, as well as my Muvna 8, Versalab, and Z2. If anyone else is bringing a Z2, we'll have to coordinate for burrs
Still haven't got my stage III update on my Z2 but I was in the December estimated ship range.
If I do have it by then, I'll have the SK SSP brew burrs in there.

I mean, they aren't light, but they aren't exactly heavy. I have one of those MHbomber knock boxes off amazon, and it gets thwacked with them several times everyday, and has shown no signs of even noticing.

I didn’t have my Sworks on hand (nor Melodrip) so I used an 02 glass switch with Cafec filters roughly following NeckPro’s recipe…
ZP6 on 4.5
93deg water, half-diluted TWW
50g bloom until 0:45
then pours to 130g, 190g and 255g each waiting until the water was 1-2cm above the bed
Very gentle pours in a tight spiral pattern and no physical agitation

That I got to come out NICE at 11% weight loss, it's probably the best light roast I've turned over so far, but those like 9% nordic roasts...haven't pulled one of those off successfully yet. Mine always come out seeming "underdone" when I drop them early enough to be at 9%, compared to others' 9% roasts that taste fire!

Wow I don't remember that one even being particularly chaff-y too but looks crazy on the brew bed.
That one I found too be a bit woody when I roasted too fast/low development so I gave it a bit more development time and leaned into the sweetness/acid a bit more than I do for some gesha (I love floral maxing them usually).
Ended up getting pretty orangey and the jasmine turned more lavender, I was pretty pleased with it.

I do tiny batches on my Kaffelogic which makes iterating a lot easier. Also an obsessive amount of time studying and experimenting between every roast. For a while I was spending 2+ hours adjusting profiles between each 5-6 minute roast lol.

That's super interesting because one of my tasting notes in a few of the profiling roasts was cardamom. I guess it aged into that warm spice note a bit?
Think so, it was my last couple sips of it at almost room temp. Wild how close it was to unsweetened apple pie.

Well, take some good pictures!! Sadly Sundays are rough for me, so I'll miss this one.
This is something that is somewhat intentional on some of my coffee's now. I was leaning perhaps a bit too herbal on things and I'm starting to be able to more easily pick out when (and how) to emphasize sweetness a bit more to enhance certain aromas or flavors. It's definitely really beneficial for those jasmine vanilla florals imo. A bit of sweetness really enhances it and makes it more perfumey.
I generally don't like overly sweet or caramelized coffee as it muddies other flavors sometimes but being able to more precisely play with balancing it has been really helpful to change the way flavors present.
What is this mystery producer thing all about?

I bought the coffee from Sweet Marias and they intentionally withold who produces it for some reason. They buy from the same farm year after year but never say who makes it.
It's sort of weird as it goes against normal third wave coffee ethos as well as Sweet Marias normal ethos. I was craving Gesha though and it was one of my only options beteen the websites I typically buy from at the time.
Posted a bunch of stuff on the buy sell, including an Option O Lagom 01 102HU that I’d be willing to discount for local pickup.

I finally got around to testing my local 7 pass filter water that I get for 2.50 for 5 gallons and it actually measured 0 TDS, so I figure I don't have a good argument for being too lazy to remineralize...

My dad and I roast and sell coffee to our friends, but essentially just at cost. I totally understand, I'm not trying to make money off of my friends.
Bought a new bag of cafec abaca filters, and suddenly my brews are taking 1-2mins longer to draw down than usual.
I can't think of any other variables that would've changed. It is drawing down SO. SLOW.
Strange. I compared various filters with an Aiden and Abaca were one of the fastest, #1235468219100168235 message.

I posted about this a while ago. Some of the ones that come in the bulk packs have inconsistent manufacturing. I, and others in my local area, experienced the exact same thing.
I went back to buying individual pack, but I am going to follow up with Cafec USA/Active Wisdoms at WoC.

Also just because I didn't know/realize... there's Abaca and Abaca+ which are apparently different, and it's not confusing at all 🤕

If you haven’t tried them yet, then yes. It’s the only way to know which ones you like better. I’d get the small pack for ~$10 and see what happens.

I don't use it as much as I thought I would (Muvna is more fun, IMHO) and I think I'm going to sell that and my M2 and buy a small commercial fluid bed roaster...Coffee Crafters has a new unit coming out that is small commercial/prosumer that's sized under their Valenta 3.
