Just buy a melodrip. Do a 60ml bloom. Then use the melodrip to split the remainder over two pours. Usually works well enough tbh

if you're doing the same dose then for the same bed depth you'll probably need less kettle agitation. but if you reduce agitation then you'll need to increase contact time by agitating in a less disruptive manner like with wet-wdt or alternatively doing smaller pours so the water column stays short

I'm not anti plastic, I design and use 3D printed stuff. I would just like to minimize plastic usage because of potential health reasons but more so because I think plastic feels and tends to look cheap. For a hobby I already put a lot of money and energy into, I don't want to compromise when I don't have to!

I love ultralights but if I’m honest I always end up roasting a little darker for myself because I procrastinate and don’t plan ahead. I don’t want to wait a month to drink my roasts.

Oh also I would recommend Ankarsrum. It's EU's answer to the Kitchen Aid. It's far better at bread than the KA. I've been gradually been turned off from KA given they seem to be all clout and prestige but little performance.
I learned of Ankarsrum because when we did test or small batches at Friends & Family it was in that. I asked why not KA and it's because non bowl spinning designs overheat the dough before proper gluten development. Planetary mixers are better at pastry work though. I think Ankarsrum solved that issue with a second bowl and two whisks.

Uni-taskers are exceptional at their job and causes me to reach for them when the need arises. I think the market is ripe for dumb uni-taskers which is why I'm guessing Brown said what he said. That doesn't mean items like a fish scaler, potato ricer, ginger/garlic/root grater, or even a vitamix isn't incredibly useful. They all do one thing but one thing better than maybe 99.9% of other items. I'm in a point where I prefer specialization and premium end product than a multi tool

Vitamix I wouldn't really call a unitasker.
I use mine as a spice grinder for example. I've cooked soup in it. Mine happens to also double as a food processor but that's almost a technicality

the idea is too coarse a grind usually tastes less crappy when not dialed in than too fine a grind
The vitamix's ascent series is what caused me to shift into exceptional uni-taskers. I found the food processor and blender form to be sub par to just buying the machines separately. That is what caused me to break from Brown's mind control

Owner started production roasting again last year and people noticed an improvement in roast quality. He no longer does production roasts but I’ve been having more consistent bags which I really enjoy
The Ascent series is pretty funny. You don't really save any space or money from a separate food processor. And from what I read it's a worse food processor, though it has served my needs just fine.
The blender portion is the same as any Vitamix. Only minor difference is they mostly only come with those wide pitchers which makes blending small quantities a pain but you can always use different pitchers

The wide pitcher is good if you didn't have a processor! In college I made loads of hummus but my 5200 can't do that. I plan to buy a Cuisinart classic 2button processor or sheet of like a grand and just buy a robo coup. That shit blew my mind when I saw it in action. It went through my entire 30lb box of apple no sweat yet it's about the same size as a Cuisinart!
I still never understood why I was assigned apple dicing duty to just puree them afterwards but yes chef or whatever

I just use the recipe that came in the package and it has worked well with a September anaerobic washed and a Friedhats washed Rwanda. Nothing complicated at all.
Preheating the brewer seems to help but half the time I haven’t bothered with it
burr gap isn't the equivalent of nominal peak unfortunately. to make it worse, sieves are known to be very inaccurate for these measurements. ime though more often than not nominal peak sits ~200 um to the right of burr gap
unrelated pulled a banger of a shot with H&S's Keramo (12/25 roast date) and the stone fruit and lemonade in finish has lasted for hours now

I’d agree sieves can be finicky but I’m using fishers scientific, personally I find them to be pretty solid but that’s just me.

Didn't take it to be combative at all. My apologies if that's how my response came across. Nominal peak is the boulder peak we see in grind distribution plots when done with imaging or laser. The reason it almost always sits at a higher value than spacing between burrs is because only one axis of the particle is restricted to the burr spacing and other two axes can therefore have dimensions higher than that. Add to that the fact that coffee grounds tend to not rest on the shorter edge when doing something like imaging, so what gets calculated are usually the larger edges
So in a sieve you can have the same phenomenon where the larger edge being perpendicular to the hole can easily pass through

I've been using the first recipe but four equal pours at 93c. I've also been using a Comandante since that's what they reference and have had some killer brews. Sey and Aviary particularly have shined.

Whoops - wasn’t too much of it - so feel free to drink or share it with someone.
I used Goya's guava paste! It's a very reduced version of guava jam. When R&Ding the guava topping I found guava jam from Bonne Mama or any other jam brand could become a bit too loose especially when baked from room temp or if the brand is more fluidic. I like using the paste then blending it with hot water or whisking it with water in a saucier/sauce pot over low to get the sweetness and texture I want.
The Bonne Mama guava jam works great though! I'm quite finnicky and wanted to reduce the margin of error in terms of leakage so that's why I started from paste. I wanted my product to look good for you all! Sadly even a few of my kolaches leaked :'(
If you start from jam and are worried about leaks try keeping it in the fridge or even freezer prior or just make the divets a bit deeper or wider in case the jam wants to cause issues in the oven. You can also just use the paste without modifications. Many latin pastries do that, most famously pastelito de guyaba! The flavor will be more intense and texture will be firmer. For kolaches that could work! I just wanted to honor the tradition of using a jammy texture topping and having a topping that still isn't completely firm or gelatinous after baking. I wanted a slight drippy if the Kolache was tilted.
There are many routes for success!
Thankfully guavas are naturally high in pectin and hold their flavor very well through cooking processes. So I think raw paste, thinned paste, or jam you're bound to have a pretty damn tasty product
