I think it’s good but the hype is insane

It’s wild how much hype they got last year. The food is good but service was alright. I didn’t get any wine nor did my friend so I assume with their list it would be good but a bad or average somm could recommend shit.

If I were to go again, and if you were to go soon I’d opt for more seafood options. I did mostly land and stir fried grain dishes. Good but I feel other restaurants can do similar if not better quality and quantity for $15 instead of $29

I have heard their taco nights are good and well priced

I’m not exactly sure where the chef and his family is from in terms of region of Thailand but I swear I heard he’s from Phuket which is the southern most part of the country. It’s the same region Luv2Eat chefs are from.

So opt for seafood and tropical dishes if you can confirm his family specializes in southern Thai. If northern opt for stir fries and meat options.

I really enjoyed Siam+Night Market. It feels like a less fussy and fun spot compared to Anajak

I also hate how Anajak does their lighting. It’s so dark. All you get is this small lamp on your table. No other ambient lights whatsoever.

Gusto Bread in Long Beach

I enjoy their Mexican heritage influenced French pastries. I do think their style leans on dense and more chewy style of patisserie. It might be the inclusion of masa or it might be just the usage of sourdough, whatever it is don’t expect this teeth on thin glass like texture. Expect a more sturdy pastry for a lack of better terminology

One option is to do the vitamix emulsification process for every gallon you buy. You can even throw in a stabilizer such as a lecithin or a gum to further ensure you have a stable emulsion for as long as it takes you to drink that milk. Using a 0.01% or even 0.001% of the milk weight in stabilizer should be enough. The vitamix will reduce the fat molecules to a small enough size where the fat will not have a chance to coalesce back into larger molecules hindering much of a chance of separation; think 99% of stable homogenization. The stabilizer in such a low concentration should give you a 99.9% chance to have a stable emulsion.

As a final consideration you could add around 1% non fat fry milk powder to the milk. It’s almost all milk protein which is a great stabilizer and emulsifier in itself.

Whenever I get to the level of caring about my milk details I think I will try the above and report back

Though I know nothing about what is good or bad steaming so I’m not sure if more or less air is what is desired

I also just thought about this: if one figures out how to create a stable emulsion at home easily, they can then play with fat percentages. So like Straus’ rich barista formula one can also make a 4.2% milk fat or 6.5% or even 10% milk fat milk

Just be careful because once the fat percentage hits a certain percentage you then can run the risk of turn your fat in water emulsion into a water in fat emulsion

AKA what happens when you take heavy cream and churn it into butter

I’m sure a 6% milk fat milk would be luscious. It will most likely drown out the nuances of the espresso

But it’ll be more likely to latch onto flavor additives so flavoring your milk would be much easier and impactful

I love my Samsung Galaxy S22, but it is aging now.

i've always found the Samsung UI to be more intuitive than Google Pixels.. but those are also good value.

a benefit to being all Google with Pixel is being closer to the updates, and not needing Samsung to package updates.

I've always really liked the pics from the Samsung phones.. my S22 seems to take better pics than my wife's iPhone 13 mini, especially in weird lighting conditions.

the newest iPhone does take pretty darned good pics, tho. a friend just upgraded and they like it.

Not sure on your budget but I've been super happy with my Pixel 9 Pro.
Maybe things are different now but my OnePlus 7 Pro was just buggy and I feel that's where they were saving money on the cheaper phone. But Chinese phones are equally as expensive now so hopefully they've addressed that

With Apple to me it feels like their phone and they control what I'm allowed to do.
I use a lot of open source products and they're limited on iPhones. They have to be installed through their store, can't send notifications unless you use their notification network, etc.
It's a philosophy thing as much as practical, I couldn't ever pay for their products
