It should auto reverse the changes but in the future to recommended to unset Files as the default file manager before removing

The only official way to run code on uninstall is blocked by Microsoft (for good reason but they should really make exceptions for apps like Files)
That said, we do have other ways to workaround this and on recent versions of Files it's supposed to revert them
