I am using this old iPhone of mine but the email of the account is deleted and I don’t even remember the password, can I change my email account to another one?

Try going to Gmail.com and signing out, then create a new gmail account claiming that email address

If it’s not taken, you should be able to send a code when signing in with that Apple ID
