A while back I used a MacBook 12" 2015 with slack on it on a diff Apple ID as the main user. Then created my user to use that computer. If I want to update that app, I need to input the other persons Apple ID password. Is there a way around this?

Unfortunately, no.
I replaced it with a new MBP

I know who the person is, but I highly doubt that he'd trust me with his password.

Then I’m afraid without the Apple ID. I don’t think you can update the app.

Do you suppose that if I were to delete Slack and then redownload it it'll allow to to put it under my account or would it ask me for the other persons password?

No, if you redownload it from App Store under your id it will work if you remove it.
