I find it unfair that Playstation players, xbox players and pc players get the new 1.1 update before us switch players, I understand why because you're trying to implement single joycon support. However, first of all. Nobody plays with a single joycon it is extremely uncomfortable, and number 2 can't you just like. Release 1.1 and THEN add the single joycon support later?

Heya! Yeah, I get your frustration, been there with other games myself. 
I can't go into exact details, but part of the problem was how long it takes for Nintendo to verify/approve any update we submit during this time of year (lots of games submitting things for Holidays), we decided to take the less risky path and not make the other platforms wait on Nintendo.
Separating the content wouldn't really speed it up much as it still needs to go through the long approval process.
As for single joycon users.... I use them when playing with people locally

A large appeal of switch is the way it's controllers work, being able to quickly switch between controller schemes like that and let anyone jump in is a very important part of party games that people enjoy. Saying nobody plays like that is just incorrect, hell I use single joycon when playing with my family. Keep in mind that this game is a multiplayer game at the end of the day.
