You know the contracts never interested me but towing cars did. I haven't done a single contract yet but I know that the tow truck missions guarantee profit as long as you don't blow yourself up and pay the hospital fee. The police aren't after the truck so I always take a few extra seconds to spawn an mk2 just in case they get called so I can leave the area and come back. You're guaranteed to profit but that's assuming you're willing to put in the work. If instead you see it as a chore, you may just end up operating at a net loss depending on how many times you decide to blow yourself up.

Salvage yard if you’re solo and want to minimize expenses. As I mentioned, it allows you to make money without having to keep paying but only if you are up to put in the work.

You can add a motorbike workshop that I believe works similar to the automotive workshop. MC businesses become available and they allow you to steal supplies at no additional cost to yourself which makes everything you make off of it profit.
