Ah, well some of them are just wobbly. The sparrow is the worst when it comes to wobbles, but it's also the fastest. Things get smoother as your flying stat increases, of course. Best way to do it, for me atl east, is to go full-steam ahead and compensate for any wobbles with your yaw keys. The two bumpers, in my case.

The buzzard is a nice, smooth flying chopper. But the weaponized version only fires 2 missiles every 3-4 seconds. The sparrow just fires them continuously and endlessly.

Steering and yawing at the same stime can help you turn faster if you're flying straight at a skyscraper, btw. Steering and the opposite yaw is how you drift
