If it's the single-location sell mission, you wouldn't even go there. Just fire a missile from an Oppressor MK2 or Sparrow, lose the cops and then deliver the bike to the real destination. If it's either of the other sell missions, you can see when there are a bunch of cars parked nearby - it's usually obvious when there are cops there.
