There's plenty of npc invaders so even if you don't have multilayer you can still enjoy the "experience" of getting invaded, apart from not being embered I know of 2 npc invaders that will not actually invade you if you follow their quest line and some npc that will invade you if you follow other npcs quest line
Although to trigger them you have to be within their area for them to invade
Yellowfinger Heysel will invade you 1st time but after defeating him if you can join up with rosaria fingers and have him as a summon instead of having him invade you a 2nd you will even get an emote of him but that will lock you out of sirris quest....which also locks you out of getting invaded by Creighton the Wanderer
Same with Londor Pale Shade, being freinds with Yuria of Londor they can be summoned for 2 bosses piss off Yuria of Londor then he will invade twice, once in Irithyll of The Boreal Valley and apparently Farron Keep where the basilisks are, I never got invaded by them there but apparently he does

Also yeah I've got the Thief from the High wall of Lothric and i just today bought the bastard sword and the mace from him

thats different, he is an npc who will go and "collect" items from different locations, you can send him out to different areas you have completed to buy items from him
