No one really knows what kind of weapons you'd like though

Or you can use exile GS, as it's one of the best PvE weapon, but you need to invest in vitality

#

And if you get like 25-30 vit and wear Havel's ring you can wear the lothric knight armor, which offers high defense and has good poise

But for most people that's too much points in vitality, so if you don't mind having to invest into vitality then you can try this

Oh and if you don't wanna invest in vitality cause the 2 swords I mentioned are really heavy, you can use the pontiff knight curved sword, I heard it's really good
