I like 27 as the first hard point for health (a solid, exact 1000HP) and later go up to 39 (exactly 1200HP) - both values unembered and without Ring of Favor. After 39, I don't see any point in investing further into Vigor, the returns are just too bad.

Strength depends on your weapon. If you want, you can look up its scaling, and set your strength to a value that equals that when two-handing. Example: Your weapons scaling caps at 60, so you set strength to 40. The 1.5 multiplier from two-handing will put you exactly at 60 then, making the most of that particular weapon. Some weapons, despite being strength-focused, might need you to invest into Dexterity to meet their requirements.

If Vigor and Strength are sufficient, I suggest getting some more Vitality (15-ish). Strength weapons are often a little heavier, and together with appropriate armor you might get past the 70% roll threshold rather quickly. Make sure to involve Ring of Favor and/or Havel's Ring into those calculations. You want to sit as close to 70% as you can, while wearing all the stuff you need.

And finally, Endurance. It's never a bad investment for a melee character to put a point into Endurance, as it's your resource for preventing and dealing damage at the same time. Stamina gains cap at 40 Endurance (160 Stamina without Ring of Favor), so there's no reason to go beyond that, but up until then it's always a point well spent.
