I've heard I can use cheat engine, but I mean... It's literally called Cheat Engine and I don't want to be banned lol

reviving the boss with cheat engine doesn't get you banned

the only in game actual option is ng+

#

you can also install a mod for it but that has prob way higher risk when it comes to bans

If you don't want to use Cheat Engine, you can just keep a backup before the boss gate and restore that backup after beating

C:\Users\[username]\AppData\Roaming\DarkSoulsIII
in a folder here named a bunch of numbers/letters with a file inside named
DS30000.sl2
this file has all 10 of your character save slots
