You need to enable ibeacons from within the home assistant app settings
Tracking phones using this method won't work that well like I mentioned in the video

I found it easier to use MQTT Explorer on a laptop to see what BLE devices are in range of my ESP32. Just be aware that some devices send out random BLE mac addresses (iPhones, Apple watches...) but there's now a way to do this using an IRK key.
My biggest problem with this is getting the ESP32 to stay connected to my wifi. When connected to my laptop it solidly connects, when not connected via USB to the laptop they connect maybe 1 he in a 24hr period.
