I have recently changed a spool of filament for a new one (these were previously opened they day before not used). When I started my print (Z Offset Correct & Leveling Correct) it starts printing and starts to make towers and filament all over (Model has worked prevously) When I switched it back same problem.

If literally the only thing you did was change filament, and things broke. And if changing back to the old filament didn't resolve the issue. Then you introduced a clog while changing filaments. Clean the hotend.

Is the bed that you have a glass textured bed or a magnetic flex bed? If it's glass, try to rinse it out with a bit of soap and water, dry it and lightly spray some hairspray on it. (Right before you place your bed back in the printer.) When the hairspray dries it makes the bed tacky, allowing the first layer of your print to stick. I myself use this method on my ender 5 plus. I'm not sure if this can work a magnetic flex bed. To be honest.
