The one problem, is that potatoes are overpowered. And then you would dedicate production to them, and if a bad growing season hits you get a potato famine and die. Devs would need to nerf to potato from its real life counterparts for game balance.

If the concerns for OP potatoes can be addressed, this'd be a good option for a new crop, since cold weather crops really are rather limited at the moment.

tomatoes and potatoes are from the same family too, so it would be on track with our current crops!
and after doing the cold weather starter challenge i definitely agree that cold weather tolerant crops are in dire need.

Boosting cold weather potatoes
You could balance it by making them growing ONLY in the cold (bottom two or three ticks) as the cold weather version of corn
Ok Idea, the farther you get from cold the more likely to get poisonous potatos
Like, I live in California and have a garden it's 109 and my potatoes are doing fine, now the kale, I'm convinced it has reached immortality, hasn't rain in 2 months, haven't watered it since last year cause I don't like kale, way did I plant it you ask, I didn't It's coming out of the compost...
Sure, but I mean the game isn't realistic when it comes to temperature tolerances. I live in the corn belt and while summer corn is most common, you can overwinter corn to make spring corn, and it would 100% survive in the wetter conditions of the jungle or the semiarid ocean biome. It's all for balance
My idea for nerfing potatoes while keeping some aspects to them might be like, making them grow easily but you would need a lot of them in recipes for higher quality recipes
Essentially, they'd be good for low quality meals but not very efficient for kitchens, kind of like mushroom stew is
I can see potatoes only being eaten when cooked (as real ones) and needing potatoes to begin planting them so making it hard early as you need to be able to have some stock before going full on it and making sure your kitchen don't use them all, so putting a limitation on them in the kitchen or storage for when to cook or not ?

I've watched a person do just that - plucked it from the ground, brushed off the dirt, and nommed. It was weird and uncomfortable 😅
