this could be implemented in many ways, one of which could be a long minecart that extends over both and a special 2 wide cart assembler, I know this is silly but you currently cant put two minecarts directly next to each other on a minecart contraption, so this would be a useful feature and allow for more creativity when making minecart contraptions.

Yes that would work. But the orientation of the build would be messed up
